You can have quite large spreadsheets in googleI believe. And you can sort.

What parameters should be included?

Park name, Ride name, creator, ride make (if realistic), length, drop height, speed, and release date are the ones I'd start with. 

Those. And coaster type following rcdb's categories. Inverted, Sit-down, stuff like that. Some broad categories.

Alright well lets try this then. Anyone with this link should be able to edit the page. I've added a few things already.

All right we've got some nice additions so far, thanks to those that have contributed. 

So far the Fenghuang from BGA is the longest in the sheet at 6,086 feet, Leviathan has the largest drop (200) and is the fastest (83), and WoF's Mamba has the longest run time at 2:41.
